Dessert Healthy Peanut Butter Blondies - Blondy peanut butter is healthy, gluten-free, dairy-free, refined, sugar-free and vegetable-friendly! Made of chickpeas, but you will never know! It's the perfect healthy dessert recipe that you can feel wonderful!
Ingredients
- ¼ cup coconut sugar
- ¼ cup honey can substitute maple syrup for a vegan option
- ¼ tsp baking soda
- ½ cup chocolate chips
- ½ cup peanut butter
- ½ tsp baking powder
- ½ tsp sea salt
- 1 15 oz can chickpeas (garbanzo beans), rinsed and drained
- 1 TBS almond milk
- 2 tsp vanilla
- extra sea salt & chocolate chips for the top
Instructions
- Heat the oven to 350 ° C. Grease a baking glass tray 8 or 9 inches and leave it aside.
- Put all ingredients except the chocolate in the mixer (Vitamix) or the food processor. I highly recommend a great blend like Vitamix, so you get a perfectly smooth consistency.
- Mix until creamy and smooth.
- Add the chocolate once and mix it by hand.
- Pour the mixture in the prepared pan and spread evenly.
- Sprinkle a few pieces of chocolate and sea salt on top.
- Bake in the preheated oven for 20-30 minutes until the edges stop from the pan and the top is placed in light brown.
- Let it cool for at least 15 minutes, then enjoy it!
- Store in a sealed container in the refrigerator. You can eat it cold or hot in the microwave for 15 seconds to restore fresh pleasure from the oven!
