Chicken Fried Rice (Weight Watchers)
Ingredients 

  • 1 cooking spray
  • 1⁄2 cup carrot, diced
  • 1⁄2 cup frozen green peas, thawed
  • 1⁄2 cup scallion, chopped, green and white parts
  • 12 oz boneless skinless boneless, skinless chicken breast, cut into 1/2-inch cubes
  • 2 cup cooked brown rice, kept hot
  • 2 medium garlic cloves, minced
  • 4 large egg white

Directions

  1. Cover a large non-stick pan with cooking spray and place on medium heat. Add egg whites and cook until egg whites are scrambled, stirring often, about 3 to 5 minutes; lift off pan and set aside.
  2. High temperature, shoot the pan with cooking spray and put it back on medium heat. Add green onions and garlic. Bake 2 minutes. Add chicken and carrots. Fried until the chicken becomes golden brown and cooks, about 5 minutes.
  3. Stir in preserved cooked proteins, cooked brown rice, peas and soy sauce. Cook until heated, stirring once or twice, about one minute.
