Chicken Fried Rice [better than take-out!]

Skip the takeaway and make this simple chicken with fried rice at home. It's a simple dinner on weekdays to be a budget friend, a real crowd wizard!

Ingredients

  • 1 1/2 cups frozen peas and carrots
  • 1/2 lb boneless skinless chicken breasts diced into 3/4-inch pieces
  • 1/2 yellow onion diced
  • 2 cloves garlic finely minced
  • 2 eggs
  • 2 green onions chopped
  • 2 Tablespoons butter divided
  • 3 cups cooked jasmine rice preferably left over rice. Brown rice is fine too

Instructions

  1. Heat a large skillet or pan over medium heat.
  2. Add half a tablespoon of butter to the pan.
  3. Add the chicken generously, salt and pepper and cook until the chicken is cooked, about 6-7 minutes.
  4. Place the cooked chicken on a clean plate and set aside.
  5. Add a tablespoon of butter to the pan.
  6. Cook onions, carrots and peas until tender, about 4 minutes.
  7. Add the garlic and cook for another minute.
  8. Push the vegetables aside and throw the eggs in the empty side of the pan.
  9. Move everything together and add a tablespoon and a half of the butter to the pan.
  10. Add rice, green onions, soy sauce, chicken and mix mixes.
  11. Let the rice "grilled" and get a bit of confusion by leaving it for a minute.
  12. Move everything and let the rice become a little crunchy again.
  13. Turn off the fire and add sesame oil.
  14. Fuss on the combination.
  15. Service immediately.
