This vegetable bread plate without cookie dough is paleo and does not contain sugars but is full of flavors. Cookie Dough Cheesecake Filling
- 1 1/2 cups raw cashews soaked in hot water for 1 hour
- 1/2 cup refined coconut oil melted
- 1/3 cup coconut cream solid part only
- 1/2 cup maple syrup or honey use maple syrup if vegan, plus more to taste
- 3-4 Tbsp. fresh lemon juice
- 1 Tbsp. + 1/2 tsp. apple cider vinegar
- 2 tsp. vanilla extract
- 1/3 cup vegan chocolate chips
- pinch salt
Ganache Topping
- 1/2 cup vegan chocolate chips
- 1/2 cup coconut cream solid part only
- 2 tsp. refined coconut oil
- 1/2 tsp. vanilla
- Equipment Needed
- high speed blender
- 7-inch springform pan
Instructions:
Make the crust: Place cashew nuts in a dry pan over medium heat. Grilled for 5 minutes or until it turns golden brown and smells from all sides. Remove from pan and let cool slightly.
Combine all the veneer ingredients into the blender or food processor. Even pulses break up. Press the mixture at the bottom of the 7-inch spring shape. Freeze for 15 minutes while filling.
