Easy Chicken Fried Rice

The fried chicken rice is very easy at home and is much better, healthier and cheaper than picking up!

Ingredients
SERVES 2

  • 1 chicken breast, cut into bite-sized pieces and seasoned with salt & pepper
  • 1 clove garlic, minced
  • 1 egg
  • 1/2 cup frozen mixed vegetables
  • 2 cups prepared rice (I used long grain brown rice)
  • 2 green onions, chopped
  • 2 Tablespoons gluten-free Tamari or soy sauce (dish will not be GF if using soy sauce)
  • 3 teaspoons sesame or wok oil, divided

Directions

  1. Beat the eggs with 1 teaspoon of oil in a bowl and set aside.
  2. Heat 1 teaspoon of oil in a large pan or pan over medium heat. Add the seasoned chicken and stir to simmer and place on a plate.
  3. Heat a teaspoon remaining oil in the pan and add the frozen vegetables and green onions. Turn until tender for 2 minutes, then add garlic and cook for another 30 seconds. Push the vegetables next to the pan and add the mixture of eggs and sesame oil in the middle and mix.
  4. Add the cooked chicken, rice and gluten-free tamari or soy sauce to the pan and mix well.
