The fried chicken rice is very easy at home and is much better, healthier and cheaper than picking up!
Ingredients
SERVES 2
- 1 chicken breast, cut into bite-sized pieces and seasoned with salt & pepper
- 1 clove garlic, minced
- 1 egg
- 1/2 cup frozen mixed vegetables
- 2 cups prepared rice (I used long grain brown rice)
- 2 green onions, chopped
- 2 Tablespoons gluten-free Tamari or soy sauce (dish will not be GF if using soy sauce)
- 3 teaspoons sesame or wok oil, divided
Directions
- Beat the eggs with 1 teaspoon of oil in a bowl and set aside.
- Heat 1 teaspoon of oil in a large pan or pan over medium heat. Add the seasoned chicken and stir to simmer and place on a plate.
- Heat a teaspoon remaining oil in the pan and add the frozen vegetables and green onions. Turn until tender for 2 minutes, then add garlic and cook for another 30 seconds. Push the vegetables next to the pan and add the mixture of eggs and sesame oil in the middle and mix.
- Add the cooked chicken, rice and gluten-free tamari or soy sauce to the pan and mix well.
